Marinated Grilling Cheese & Roasted Red Pepper Sandwich
Makes 2 sandwiches
1/2 cup white vinegar
1/2 cup water
2 tablespoons granulated sugar
2 teaspoons Kosher salt
1 small red onion, thinly sliced
1 pkg. ROUGETTE® Bon•fire Marinated Grilling Cheese with Herbs
8 oz. jarred roasted red peppers, drained and patted dry
1/4 cup baby arugula
2 French Rolls, split
Preheat grill to medium heat.
Combine vinegar, water, sugar and salt in a small microwave safe bowl and heat on high for 2 minutes.
Remove vinegar mixture from microwave and add onions. Set aside for 15 minutes.
Meanwhile, remove Marinated Grilling Cheese from wrapping and arrange in grilling pan. Place pan on preheated grill and close grill lid. Grill cheese for 5 minutes over medium heat.
Use a spatula to carefully turn cheese in pan and grill for five more minutes, until cheese is just starting to melt. Remove pan from grill.
Grill French rolls and until slightly toasted. Drain the marinade from the pickled onions.
To assemble sandwiches, layer strips of roasted red peppers on each roll followed by half of the arugula, one portion of Marinated Grilling Cheese, and half of the pickled onions. Serve immediately.
